Date and Macadamia Flaxseed flour Loaf

Our Date and Macadamia Flaxseed Flour Loaf is a nutrient-dense cake made with flaxseed flour, offering a gluten-free and fibre-rich alternative to traditional loaves.

Ingredients

  • ¾ cup (110g) finely chopped seeded dates
  • 1/3 cup boiling water
  • ½ teaspoon bicarbonate of soda
  • 1/3 cup of maple syrup
  • 90g butter, softened
  • ½ (75g) firmly packed brown sugar
  • 2 eggs
  • ½ cup wholemeal self-raising flour
  • ½ cup of plain flour
  • ¼ cup of Flaxseed flour
  • 1 cup of chopped macidamias

Method

  1. Preheat oven to moderate (180°C/160°C fan forced). Greese 14cm x 21cm loaf pan
  2. Combine Dates and the water in a small heatproof bowl. Stir in soda and stand for 5 mins. Stir in Maply syrup
  3. In a medium bowl, beat butter and sugar with mixer until light and fluffy. Add eggs one at a time mixing until they are just combined (I found stiring with a spoon at this stage to be better than using my mixer). Add butter mixture to date mixture, stir in sifted flours, in two batches.
  4. Mix in chopped Macidamias and spread mixture into pan and bake about 50 minuits or until the skerer comes out clean. Let cake stand in tin for about 10 minuits before turning onto cake rack.

As a busy mum myself, I am always trying to find ways to include our Flax in my family’s diet without detection. One weekend, I made this Date and Macadamia Loaf for the upcoming weeks' school/work lunchboxes, and it was so good that it didn’t even reach Monday! - Lisa
